For both wild game and animals kept in enclosures, the expertise of hunters and keepers is crucial for good food hygiene. As soon as there are indications of characteristics of concern, an official veterinarian must be consulted so that he or she can conduct an appropriate examination and assessment.
If a hunter delivers game to an approved establishment, official meat inspection is always mandatory.
The carcasses of certain species such as wild boar or badger must also be examined for infestation with trichinella. The samples for such an examination can be taken by the hunter if he is trained and has a corresponding mandate from the responsible veterinary office. The samples are then examined by an accredited laboratory and only if the findings are satisfactory may the game be released for consumption.
